Recipes/Ways to Use:
Stuffed eggplant- Brinjal (masala baingan / bharali vangi)
To prepare the stuffing; Add roasted dry coconut, Katdare Goda Masala, roasted peanut powder, red chilli powder, salt and Mix it well. Then mix tamarind pulp and grated jaggery. Mix it well with spices. First make two vertical slits to the brinjal. Stuff well the above mixture in to the brinjal slits. Sauté these stuffed brinjals in the heated oil on medium heat till they get tender. Add little water and salt. Cover the wok with lid and let the brinjal cook on steam. To garnish, sprinkle roasted peanut powder and coriander leaves over cooked brinjals and serve hot with bhakari or chapatti.
