Tapioca is one of the inevitable dishes in Kerala’s buffet. In Kerala Tapioca is mainly known by different names like Kapaa, Maracheeni etc. After the harvest, tapioca is dried during the off-seasons. These dried tapiocas are called by the name ‘Unakka Kappa‘ or’’ Vaattu Kappa’ (dried tapioca). During the winter season, this dried tapioca or Unakka kappa is normally used for the preparation of ‘Kappa Puzhukku’ or Tapioca mixed with grounded coconut mixture.
